Preparation : Davos style pearl barley soup (Davoser Gerstensuppe)
Chop the white onions finely
Cut the leeks lengthways and wash thoroughly
Cut the carrots, leeks and celeriac root into small dice
Bring the vegetable stock to the simmer
Chop the chives finely
Method : Davos style pearl barley soup (Davoser Gerstensuppe)
Sauté in butter the onions and diced vegetables
Add the pearl barley and sauté as well
Dust with the flour and top up with the hot vegetable stock while permanently stirring
Bring to a gentle boil and season with salt and pepper
Skim the soup with a slotted spoon if necessary to remove impurities from the surface while boiling
Simmer the soup for 40 minutes
Finish the soup by adding the pouring cream and adjusting the seasoning.
Serve as desired and garnish with the chopped chives
