หัวปลากะพงขาว 1 หัว
น้ำพริกแกงกะหรี่หัวปลา 150 กรัม
หอมใหญ่ซอยบางๆ 100 กรัม
ใบกะหรี่ 10 กรัม
กระเจี๊ยบ 10 ฝัก
มะเขือเทศสีดาหั่นครึ่ง 7 ลูก
กะทิคั้นข้น 3 ถ้วย

เครื่องปรุง

น้ำตาลปี๊บ 2 ½ ช้อนโต๊ะ
น้ำปลา 3-4 ช้อนโต๊ะ
น้ำมะขามเปียกคั้นข้นๆ 3-4 ช้อนโต๊ะ

Ingredients

1 head of Sea snapper, cleaned
150 g fish head curry paste
100 g thinly wedged onion
10 g curry leaves
10 lady’s fingers, cleaned and trimmed both ends
7 cherry tomatoes, halved
3 c. coconut milk

Seasonings

2 ½ tbs. palm sugar
3-4 tbs. fish sauce
3-4 tbs. concentrated tamarind juice

วิธีทำ

1. นำหม้อใบใหญ่ตั้งไฟ ใส่น้ำมันลงไปเล็กน้อย แล้วใส่หอมใหญ่ลงผัดจนสุก นิ่ม ใส่น้ำพริกแกง ใบกะหรี่ลงผัดให้หอม

In the big pot that fit fish head, preheat and lightly grease with vegetable oil. Add onion to stir fry until soft and translucent, then, add fish head curry paste and curry leaves to stir fry over medium heat until aroma.

2. ใส่หัวปลาลงไป ตามด้วยกะทิ คนเบาๆให้น้ำพริกละลายดี เคี่ยวไฟอ่อนประมาณ 10 นาที หรือจนกว่าหัวปลาจะสุก ระหว่างนี้ ปรุงรสด้วยน้ำตาลปี๊บ น้ำปลา และน้ำมะขามเปียก

Add fish heat and coconut milk to cover fish head. Carefully stir to dissolve curry paste. Simmer over lowest heat for 10 minutes or until fish head is cooked. In the meantime, season with palm sugar, fish sauce and tamarind juice.

3. พอหัวปลาเริ่มสุก ใส่กระเจี๊ยบ มะเขือเทศ แล้วเคี่ยวไฟอ่อนๆต่อ จนกว่าหัวปลาจะเปื่อยดี และน้ำแกงข้นเล็กน้อย

Add lady’s finger and tomatoes and continue to simmer over the lowest heat until fish head is very well cooked and the sauce are reduced by 1/3.
