แกงกะทิไตปลา (Tai pla curry)

Ingredients

ส่วนผสม

ไตปลาอย่างดี 80 กรัม
น้ำพริกแกงไตปลา 80 กรัม
ปลาทูนึ่งแกะเอาแต่เนื้อ 150 กรัม
มะเขือเปราะผ่า 4 80 กรัม
ฟักทองหั่นชิ้นพอดีคำ 200 กรัม
ข้าวโพดอ่อนหั่นเฉียง 80 กรัม
หน่อไม้ดองผ่าครึ่งตามยาวแล้วหั่นขนาดพอดีคำ 150 กรัม
ถั่วฝักยาวหั่นเป็นท่อนๆ 80 กรัม
สะตอแกะแล้ว 80 กรัม
ใบมะกรูดฉีก 50 กรัม
กะทิ 2 ถ้วย

เครื่องปรุง

น้ำปลาดี 3 ช้อนโต๊ะ

Ingredients

80 g good quality Tai pla
80 g Tai pla curry paste
150 g steamed mackerel, discard all bones
80 g quaterred eggplant
200 g pumpkin cut into bite size
80 g diagnosis cut young corn
150 g preseve bamboo shoot, cut lenghtwise and chopped in to bite size
80 g sting bean cut in 1 inch size
80 g Parkia nut
50 g hand – torned kaffir lime leaves
2 cups coconut milk

Seasoning

3 tbs. fish sauce

วิธีทำ

1. นำกะทิตั้งไฟให้เดือด ใส่ไตปลาลงไป เคี่ยวสักพักให้สุกทั่วใส่น้ำพริกแกงลงไป คนให้น้ำพริกละลายทั่วกัน

Bring the coconut milk to the boil, add Tai pla and let it boil for a while. Add Tai pla curry paste and stir well.

2. ใส่ใบมะกรูดลงไปนิดหน่อยเพื่อความหอม ใส่มะเขือเปราะ หน่อไม้ดอง

Add half of kaffir lime leaves for the aroma, eggplant and preserved bamboo shoot.

3. ตามด้วยข้าวโพดอ่อน สะตอ และ ถั่วฝักยาว

Follow by young corn, Parkia nut and string bean.

4. ปรุงรสด้วยน้ำปลานิดเดียวเท่านั้นพอครับ ให้ออกรส เผ็ด แล้วก็เค็ม แล้วใส่เนื้อปลาทูแกะ โรยใบมะกรูดลงไป รอให้เดือดอีกครั้งก็ปิดไฟได้

Season with fish sauce and add deboned and steamed mackerel. Add kaffir lime leaves and when it come to the boil again, turn off the heat.
