ส่วนประกอบ

เนื้อปลากรายขูด 300 กรัม
น้ำพริกแกงเผ็ด 100 กรัม
ถั่วฝักยาวหั่นฝอย 150 กรัม
ใบมะกรูดหั่นฝอย 80 กรัม
พริกไทยอ่อนหั่นท่อน 120 กรัม
พริกชี้ฟ้าซอย 50 กรัม

เครื่องปรุง

น้ำตาล ½ ช้อนชา
น้ำปลา 2-3 ช้อนโต๊ะ

Ingredients

300 g minced Clown featherback meat
100 g red curry paste
150 g thinly sliced string bean
80 g chiffonarded kaffir kime leaves
120 g cut fresh pepper corn
50 g thinly sliced goat chili

Seasonings

½ tsp. sugar
2-3 tbs. fish sauce

วิธีทำ

1. ตั้งน้ำนิดหน่อยในหม้อให้เดือด ใส่เนื้อปลากรายลงลวก ใช้หลังทัพพีบี้ๆให้เนื้อปลาเป็นชิ้นเล็ก ตักขึ้น ปล่อยสะเด็ดน้ำ

Bring small amout of water in the pot to the boil, add minced Clown featherback meat to blanch and use the back of the spoon to ladle to make minced Clown featherback meat smaller pieces.

2. ตั้งกระทะให้ร้อน ใส่น้ำมันลงไปนิดหน่อย พอน้ำมันร้อนใส่น้ำพริกแกงลงผัดบนไฟกลางๆจนหอม ใส่เนื้อปลากรายลวกสุกลงผัดให้เข้ากัน

Preheat and lightly grease the wok with vegetable oil, add red curry paste to stir fry over medium heat until aroma an add blanched minced Clown featherback meat to stir fry until well cooperated.

3. ปรุงรสด้วยน้ำตาล น้ำปลา ใส่ถั่วฝักยาวหั่นฝอย ใบมะกรูด ผัดให้เข้ากัน ใส่พริกไทยอ่อน พริกชี้ฟ้าซอย ผัดให้เข้ากันอีกทีก็ปิดไฟได้

Season with sugar and fish sauce. Add thinly sliced string bean and chiffonarded kaffir lime leaves and stir well. Add fresh pepper corn and thinly sliced goat chili and stir well before turning the heat off.
