1. นำชิ้นปลาที่ทำความสะอาดแล้ว ซับน้ำให้แห้ง คลุกแป้งสาลีบางๆ ตบแป้งส่วนเกินออก Wash and pad dry snake fish cutlets. Dust snake fish cutlet with plain flour and remove the excess flour.   
2. ตั้งกระทะให้ร้อน ใส่น้ำมันลงไปพอสมควร พอน้ำมันร้อนดี ใส่ชิ้นปลาลงทอดไฟกลางๆ จนสุกเหลืองทั้งสองด้าน ตักขึ้น พักให้สะเด็ดน้ำมัน Preheat and grease the wok with sufficient amount of vegetable oil, when the oil are very hot add dust snake fish cutlets to deep fry over medium heat until golden brown in both side. Remove from the heat and set aside.   
3. เทน้ำมันออกให้เกือบหมด ตั้งไฟ ใส่พริกกระเทียมตำลงผัดจนหอม ใส่คึ่นฉ่าย Remove the excess oil, return the wok to the heat and add roughly pounded garlic and chili to stir fry until aroma. Add Chinese celery.   
4. ปรุงรสด้วยเต้าเจี้ยว น้ำตาล น้ำปลา ใส่ปลาช่อนทอดกรอบลงไปผัดด้วยกัน Season with fermented soy bean sauce, sugar and fish sauce, add deep fried snake fish cutlets to stir until cooperated.
