Ingredients

ส่วนประกอบ

ขาหมูแล่กระดูกออกแล้ว 1 กิโลกรัม
เห็ดหอมแห้งแช่น้ำ 25 กรัม
อบเชย 2 แท่ง
โปยกั๊ก 3-4 ดอก
กระเทียม 3-5 กลีบ
พริกไทย 1 ช้อนชา
รากผักชีหั่น 1 ช้อนชา

เครื่องปรุง

น้ำตาลปี๊บ 75 กรัม
ซีอิ๊วขาว 3-4 ช้อนโต๊ะ
ซีอิ๊วดำตามชอบ

Ingredients

1 kg deboned pork’s hocks
25 g soaked and drained, dried shitake mushroom
2 sticks cinnamon
3-4 star anises
3-4 cloves garlic
1 tsp. dried pepper corn
1 tsp. roughly chopped coriander root

Seasonings

75 g palm sugar
3-4 tbs. light soy sauce
Dark soy sauce as per need

1. นำกระเทียม พริกไทย รากผักชี โขลกรวมกันให้ละเอียด พักไว้

In pestal and motar, thoroughly pound garlic, dried pepper corn and coriander root and set aside.

2. ตั้งกระทะให้ร้อน ใส่น้ำมันพืชลงไป พอกระทะร้อนใส่ขาหมูลงทอดโดยเอาด้านหนังลงทอดก่อน ทอดพอแค่หนังตึงๆ และด้านนอกสุกทั่ว ตักขึ้นพักไว้ในหม้อ

Preheat and grease the wok with vegetable oil, add pork’ s hock to sear, skin side first, until lightly golden. Add to the deep base pot.

3. เทน้ำมันออกให้หมด ใส่กระเทียม พริกไทย รากผักชี ที่โขลกรวมกันไว้ลงผัดบนไฟกลางๆ ให้หอมๆ

Discard the excess oil and add pounded garlic, dried pepper corn and coriander root to stir fry over medium heat until aroma.

4. .ใส่น้ำตาลปี๊บ ซีอิ๊วขาว ลงผัดต่อจนน้ำตาลละลาย เคี่ยวต่อไปจนข้นเหนียว เทใส่หม้อขาหมู

Add palm sugar and light soy sauce to caramelize over medium heat. Pour over pork’s hock pot.

5. เติมน้ำพอท่วมขาหมูแล้วเคี่ยวต่อบนไฟอ่อนๆ ใส่อบเชย โป๊ยกั๊ก หมั่นช้อนฟองออกให้หมด

Fill to cover pork’s hock with water and simmer over the lowest heat. Add cinnamon and star anises and remove the scum.

6. ใส่เห็ดหอมแช่น้ำจนนิ่ม แล้วเคี่ยวต่อจนขาหมูเปิ่อยดี ถ้าสีไม่เข้มก็สามารถใส่ซีอิ๊วดำได้

Add shitake mushroom and continue to simmer until everything are soft and tender. In case of the sauce is not to dark, dark soy sauce can be added.
