ฟักข้าวปอกเปลือกแล้วหั่นเป็นชิ้นพอดีคำ 300 กรัม
แครอทหั่นชิ้นพอดีคำ 200 กรัม
กุ้งปอกเปลือก เด็ดหัวทิ้ง 300 กรัม
หอมแดง 7-9 หัว
พริกไทย 1 ช้อนโต๊ะ
กระปิ ¼ ช้อนโต๊ะ
กุ้งแห้งป่นละเอียด 3 ช้อนโต๊ะ
กะทิ 3 ถ้วย

เครื่องปรุง

น้ำตาลปี๊บ 1 ช้อนโต๊ะ
น้ำปลา 1 ช้อนโต๊ะ
น้ำมะขามเปียกคั้นข้น 2 ช้อนโต๊ะ

Ingredients

300 g spring bitter cucumber, peeled and cut into bite size
200 g carrot cut in the same size
300 g prawn, discard the head and peel
7-9 shallots
1 tbs. pepper corn
¼ tbs. shrimp paste
3 tbs. grounded dried shrimp
3 c. coconut milk

Seasoning

1 tbs. palm sugar
1 tbs. fish sauce
2 tbs. concentrate tamarind juice

1. ตำหอมแดง พริกไทย กะปิ และ กุ้งแห้งป่น จนเข้ากันดี

Pound shallot, pepper, shrimp paste and ground dried shrimp until thoroughly.

2. ตั้งกะทิให้เดือด นำพริกที่เตรียมไว้ลงละลายอย่าให้เป็นก้อน ตั้งไฟให้เดือด ใส่ฟักข้าว และแครอท

Bring the coconut milk to the boil, add the prepared paste and dissolve well. Add spring bitter cucumber and carrot.

3. เคี่ยวต่อบนไฟอ่อนจนกว่าฟักข้าวและแครอทจะสุก ปรุงรสด้วยน้ำตาลปี๊บ น้ำปลา น้ำมะขามเปียก รอให้เดือดอีกครั้ง ใส่กุ้ง แล้วปิดไฟได้

Simmer on the low heat until the spring bitter cucumber and carrot are cooked. Season with palm sugar, fish sauce and tamarind juice. When it back to the boil add shrimps and turn the heat off.
