Ingredients

ส่วนประกอบ

อกไก่หั่นชิ้นบางๆ 300 กรัม
น้ำพริกแกงเขียวหวาน 150 กรัม
ฟักทองปอกเปลือกหั่นชิ้นหนาๆ 300 กรัม
มะเขือเปราะผ่าสี่แช่น้ำ 100 กรัม
มะเขือพวง 50 กรัม
พริกชี้ฟ้าซอย 50 กรัม
โหระพาเด็ด 50 กรัม
หัวกระทิ ½ ถ้วย
หกระทิ 2 ถ้วย

เครื่องปรุง

น้ำตาลปี๊ป 1-1 ½ ช้อนโต๊ะ
น้ำปลา 2 ช้อนโต๊ะ

Ingredients

300 g thinly sliced chicken breast fillets
150 g Green curry paste
300 g pumpkin, peel and cut into chunk
100 g quartered egg plants
50 g pea egg plants
50 g julienned goat pepper
50 g hand – picked basil leaves
½ c. coconut cream
2 c. coconut milk

Seasonings

1 – 1 ½ tbs. palm sugar
2 tbs. fish sauce

วิธีทำ

1. เคี่ยวกะทิให้เดือดบนไฟแรงๆ ประมาณ 3-5 นาที

2. นำหัวกระทิเคี่ยวให้เดือดบนกระทะประมาณ 5 นาที แล้วใส่น้ำพริกแกงเขียวหวานลงผัดจนหอม เคี่ยวต่อบนไฟแรงปานกลางจนกว่าจะแตกมัน หมั่นคน

3. ปรุงรสด้วยน้ำตาลปี๊บ น้ำปลา แล้วใส่ไก่ลงผัดจนสุก ถ่ายลงหม้อกะทิ

Season with palm sugar and fish sauce, add sliced chicken breast fillets and stir well until the chicken are cooked. Transfer the coconut milk pot.

4. ตั้งไฟให้เดือด ใส่ฟักทอง เคี่ยวต่อจนฟักทองเกือบจะสุกแล้วใส่มะเขือเปราะ มะเขือพวงลงไป

Bring to rapid boil, add pumpkin and continue to simmer until the pumpkin are almost cooked. Add quartered eggplants and pea eggplants.

5. รอให้ผักสุก ใส่พริกชี้ฟ้าซอย และโรยใบโหระพาก่อนจะปิดไฟ
