1. เตรียมเตาอบที่อุณหภูมิ 180 C และเตรียมถ้วยกระดาษเรียงใส่ถาด
Preheat oven to 180 C or 350. Line standard muffin tins with paper liners.
2. ร่อนแป้งเค้ก วนินลา ผงโกโก้ และเบคกิ้งโซดาเข้าด้วยกัน ใส่เกลือและน้ำตาลทราย คนให้เข้ากัน
Sift together cake flour, vanilla powder and baking soda. Combine sugar and salt and set aside.
3. ผสมไข่แดง น้ำเปล่า นมข้มจืด และน้ำมันพืชเข้าด้วยกัน ใช้ตะกร้อมือคนให้เข้ากันดี พักไว้
Mix well egg yolks, water, evaporated milk and vegetable oil with a whisk and set aside.
4. ผสมไข่ขาวกับครีมออฟทาร์ทาร์ และตีด้วยความเร็วสูงสุด 30 วินาที ค่อยๆ ใส่น้ำตาลทรายส่วนที่ 2 จนหมด แล้วตีต่อจนขึ้นฟู ตั้งยอดอ่อน ปิดเครื่อง
With the food processor, beat the egg white and cream of tartar to the hightest speed for 30 seconds. Gradually add sugar and continue to beat until form soft peak. Turn off the food processor.
5. นำส่วนผสมในข้อ 2 กับ ข้อ 3 ผสมเข้าด้วยกัน แบ่งส่วนผสมของไข่ขาวมาใส่ครึ่งหนึ่ง ตะล่อมให้เข้ากันด้วยตะกร้อมือ แล้วจึงใส่ส่วนผสมที่เหลือ คนจนส่วนผสมเข้ากันดี
Combine ingredients in 2 and 3 and fold in half of soft peak egg white with the whisk until combined. Fold in the rest of egg white.
6. ตักส่วนผสมใส่พิมพ์ นำเข้าเตาอบ ประมาณ 15-20 นาที
Divide batter evenly among lined paper cups, filling each ¾ full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 15-20 minutes. Tranfer to wire rack to cool completely.
7. เสิร์ฟได้
Ready to serve.
