Ingredients

ส่วนผสม

สะโพกไก่สับเป็นชิ้นใหญ่ๆ 300 กรัม
ดอกขจร 300 กรัม
แครอทฝานบางๆ 100 กรัม
กะหล่ำปลีหั่นชิ้นพอดีคำๆ 100 กรัม
ข่าทุบพอแหลก 50 กรัม
ตะไค้ทุบพอแหลกแล้วตัดเป็นท่อนๆ 50 กรัม
ใบมะกรูดฉีก 50 กรัม
พริกแห้งทอด 100 กรัม
กะทิ 1 ½ ถ้วย
น้ำเปล่า 1 ½ ถ้วย
น้ำมันพริกเผา และ ผักชีสำหรับโรยหน้า

เครื่องปรุง

น้ำปลา 2 ช้อนโต๊ะ
น้ำมะขามเปียกคั้นข้นๆ 4-5 ช้อนโต๊ะ

Ingredients

300 g chicken hip cut in large chunk
300 g hand picked cowslip creepers
100 g thinly sliced carrot
100 g cabbage cut into bite size
50 g galanga, lighty pounded and cut into large chuck
50 g lamom grass, lighty pounded and cut into 1 inch size
50 g hand picked kaffir lime leaves
100 g deep fried dried chili
1 ½ c. coconut milk
1 ½ c. water
Oil from strir fry chili flake and coriander leave for garnishing

Seasonings

2 tbs. fish sauce
4-5 tbs. concentrated tamarind juice

วิธีทำ

1. นำกะทิ และ น้ำตั้งไฟ ใส่ไก่ลงไป เคี่ยวไฟอ่อนๆ จนไก่เปื่อย

Bring coconut milk and water to the boil, add chicken hip and simmer over low heat until the chicken are cooked.

2. ใส่ ข่า ตะไคร้ ใบมะกรูด เคี่ยวต่อให้มีกลิ่นหอม ใส่แครอท กะหล่ำปลี

Add galanga, lemon grass and kaffir lime leaves, simmer for a while to get the aroma and add carrot and cabbage.

3. ใส่พริกแห้งทอด ปรุงรสด้วยน้ำปลา น้ำมะขามเปียก ใส่ดอกขจร โรยหน้าด้วยน้ำมันพริกเผา ผักชี ปิดไฟได้

Add deep fried dried chili, season with fish sauce and concentrated tamarind juice . Add cowslip creepers, sprinkle with oil from strir fry chili flake and coriander before turning of the heat.
