1. นำขนุนอ่อนลงต้มในน้ำเดือด ประมาณ 30-40 นาที หรือจนกว่าจะนุ่ม ตักขึ้น ทิ้งให้สะเด็ดน้ำ In the pot, add young jackfruit and fill the pot with water to cover young jackfruit. Bring to the boil and simmer over medium heat until young jackfruit are tender. Drain well.  
2. ใส่ส่วนประกอบของเครื่องแกงลงในโถปั่น หยอดกะทิลงไปนิดหน่อย แล้วปั่นให้ละเอียด Add all ingredient for curry paste to the food processor, add little bit of coconut milk and blend well.  
3. ตั้งกระทะให้ร้อน ใส่น้ำมันลงไป นำเครื่องแกงลงผัดให้หอม ใส่ไก่ลงไป แล้วผัดให้ไก่สุกทั่ว Preheat the wok, lightly greased with vegetable oil and add curry paste to stir fry over medium heat until fragrant. Add chicken and stir fry until cooked well.   
4. ใส่ตะไคร้ ใบมะกรูด ขนุนอ่อนที่ต้มจนนิ่มแล้ว แล้วผัดให้เข้ากัน Add lemon grass, kaffir lime leaves and young jackfruit.  
5. เติมน้ำพอท่วม แล้วเคี่ยวต่อบนไฟอ่อนๆประมาณ 25-30 นาที หรือจนกว่าเครื่องแกงจะเข้าเนื้อ Add water just to cover all ingredients and simmer over the lowest heat for 25-30 minutes or until young jackfruit and chicken pieces are absorb flavors.  
6. เติมกะทิลงไป เคี่ยวต่ออีก 10-15 นาที หรือจนกว่าน้ำแกงจะข้น ขลุกขลิก ปิดไฟได้ Add coconut milk, season with salt and simmer for 10-15 minutes until the curry start to be thickening.   
7. ตักเสิร์ฟ Ready to serve.
